Sardinia is a large Italian island in the Mediterranean Sea. It is home to thousands of nuraghi – mysterious Bronze Age stone ruins shaped like beehives. What Sardinia is lesser known for is its cheese, named Casu Maisu. It won’t likely top a burger or pizza at your local fast-food chain. But in Sardinia, this cheese is a traditional favourite. Like any other cheese in the world, Casu Maisu undergoes the fermentation (rotting) process.
